Ingredients

  • 1/2 Cup DGF Candied Jalapeno Relish
  • 2 Pkgs Egg roll wrappers (20 count)
  • 3/4 Head Cabbage, finely shredded (can opt to purchase package of pre-shredded)
  • 1 Can Southwest corn, 15oz an (or Mexicorn)
  • 1 Can Black beans, rinsed and drained
  • 1 Tsp Minced garlic
  • 1 Cup Rotisserie chicken, shredded
  • 1/2 Tsp Paprika
  • 1/2 Tsp Cumin
  • 1/2 Tsp Chili Powder
  • Salt & pepper to preference
  • 1 Tbsp Fresh lime juice
  • 1/4 Tsp Lime zest
  • 2 Tbsp Olive oil (for sautéing cabbage)
  • 1/4 Cup Cilantro, finely chopped
  • 1 Large egg, beaten (for sealing egg rolls)
  • Cooking spray (to spray egg rolls before cooking)

Instructions

  • Preheat air fryer to 350 degrees.
  • Sauté the cabbage in a large skillet with the olive oil. Cook for about 5 minutes or until cabbage is soft and tender. Set aside to cool a few minutes.
  • Stir in the DGF relish, black beans, southwest corn, minced garlic, chicken, paprika, chili powder, cumin, Cilantro, lime juice and lime zest.
  • On a work surface, lay out an egg roll wrapper with one corner pointing away from you. Mound 1/3 cup filling in the center of each wrapper. Brush egg around edges of wrapper. Fold the corner closest to you over the filling. Bring both sides to the middle. Continue rolling away from you to form a tight seal around the filling. Repeat until you have used all of the filling and/or egg roll wrappers.
  • Arrange the egg rolls in one layer of the air fryer basket. Different sizes will hold different quantity of egg rolls. Spray the egg rolls in the basket with cooking spray. Cook at 350 degrees, flipping once, until golden brown and crisp to your preference, 10-12 minutes. Repeat with more batches until all egg rolls cooked.
  • Best served hot, with DGF Original or Habanero salsa. Refrigerate leftovers in a large, gallon baggy. They are also tasty cold…right out of the frig! Enjoy!
